Fooddservice management: Role Playing
Scenario below:
The Busy Preceptor!
You're just started your food systems experience as a student at a Hospital's Food & Nutrition Service cafeteria and patient feeding two weeks ago. Your preceptor - the Food & Nutrition Director - has been always with you and directed you on what to do during your experiences. However, she is very busy this week due to shortages of employees from call-offs and staff vacancies. Then an unannounced state inspection took a more of her time. In addition, this hospital just converted their patient meal service from tray-line to room-service. Therefore, she asked you to be responsible for overall food quality and meal accuracy today - as she is working on the technology of this new computer & phone call based method of obtaining patient food orders for room service.
You were so scared and upset about this and thought 'I can't to this!' because you've never worked in foodservice facility. You don't really know how to control the employee's quality of work other than being sure they use the standardized recipes. They probably wouldn't listen to you and you're not sure how to direct them. You got upset and told the director you couldn't do that! The director seemed very frustrated that you couldn't really help out on a busy day. She said you lack maturity and drive needed in a dietitian and is going to discuss with your EMU instructor. She said it is important to be able to embrace a challenge as you go into your career. I'm worried about what she will say to my instructor now.
Questions:
- Is there a different way you could have handled the responsibility the preceptor wanted to give you?
- Whom should you discuss this with?
- Identify at least two ways you could accept the Director's criticism appropriately.
- How will you describe this in your site evaluation?
