Zhang Wei is pleased to be working and looking forward to his first shift. He feels quite confident as he's already undertaken food handler training. He arrives right on time to be met by Garry, who will be his co-worker. Throughout the morning, he and Garry get along well. Zhang Wei is taken through a quick induction and is now ready to get stuck into some food preparation duties. Firstly, Garry asks him to chop some vegetables. 'No problems,' thinks Zhang Wei, as he heads over to the chopping boards. He looks for a green board but can't seem to find one. 'Ah, do you have a green board for vegetables?' asks Zhang Wei. 'Oh, we don't anymore, at least I can't find it. I've just been using the white one - you can do this too,' replies Garry. 'Oh dear,' thinks Zhang Wei. Once Zhang Wei has finished chopping the vegetables, he takes the cardboard boxes over to the bin area. He can't see a bin for recycling anywhere, so he throws the waste into the main bin. The bin area is very messy, and there are food scraps all over the floor. Zhang Wei returns to the kitchen and casts his eye over the area, and watches with concern as Garry uses a dirty tea towel and how he does not wash his hands after working with raw eggs before preparing fruit. Zhang Wei also sees a delivery of mince and chicken sitting on the bench and remembers that Garry said he was about to check the temperature of the delivered items; however, he got too busy with food service to remember to do the temperature check. When Zhang Wei enters the cool room, he comes across chicken that smells pungent and is past its use-by date. Zhang Wei asks Garry if he should throw it out, but Garry says '... Just leave it there; I need to check it personally and write it up as wastage. Zhang Wei replies, 'Do you have a segregated area for items to be disposed of?'. 'No,' says Garry, 'don't worry about that, it's only you and me. Perhaps Mabel will come in later this afternoon, but we'll remember to tell her about it. Don't stress out too much, mate.' The kitchen area looks generally messy, with food leftovers and benches not wiped down. At the end of the shift, Zhang Wei feels deflated and worried about his new job. He hunts around for some sanitiser spray, can't find anything suitable, and wonders what he will do next. a. List all the food safety issues this case study presents. C b.
