I feel as though my explanation is quite similar to yours. You also had a great point that shows how the poppers deformation adds energy to the system. For the woodpecker on the pole, it seems the continuous back and forth movement illustrates how energy is transferred between forms while some is stored in the spring with each strike. If the spring in the woodpecker toy were made with a different material (more elastic or stiffer) how would that affect the toys movement and energy conservation?
