Having just graduated with a college degree, Tim was excited about his new job at the citys newest dinner house. Tim had interviewed with the two owners Bill and Bonnie, a husband and wife team and knew he could make a difference managing their small dining room. The owners made it clear that their strength was in the kitchen both were experienced chefs and that what they needed was someone who could take care of the FOH. Bill and Bonnie were honest with Tim and explained that, not long after the restaurant had opened only a few weeks earlier, they realized that they couldnt manage all aspects of the operation themselves. They hoped to divide the kitchen duties so that while one was cooking, the other could focus on administrative matters such as paying invoices, processing payroll, and compiling financial information. Ultimately, the owners wanted to open a chain of restaurants with the same menu, dcor and so on
Tims first few nights managing the dining room were great. The customers raved about the food and generally enjoyed the dining experience. There was the occasional glitch with food coming out of the kitchen a little slowly when all the tables were full, but after the initial rush everything was running pretty smoothly. At the end of each night, Tim sat with Bonnie and discussed how they could change things to improve the speed of service and coordination between the kitchen and the dining room staff.
On the fourth night, Tim began hearing complaints about the food. Some complained that the portions were too small; one couple who had been at the restaurant the week before asked why they had changed menus. Tim couldnt understand what was happening. He made it through the night, but ended up not charging several guests for their meals in response to their numerous complaints.
This was the first night Tim had worked with Bill only it was Bonnies night off As soon as Tim began to explain the nature of the complaints, Bill became defensive. Tim was careful not to criticize the food or the preparation but tried to explain that he had received no complaints during the previous evenings. Bill and Tim agreed that it was probably a fluke and that they would consider the evening a learning experience. Unfortunately, the next night was exactly the same. The main complaint was about portion sizes; guest felt they were being overcharged for the small portions and many told Tim that they would not return.
Finally, at the end of that night, Tim asked Bill the fateful question:Are you using the same recipes that Bonnie uses?Much to Tims surprise, Bill didnt get upset. In fact, his first reaction was a big smile. Bill said, My wife and I have different styles, but we agreed on menu items that complement both our talents. We dont always see eye to eye on some of the sauces, so these might change from night to night. She also tends to use more meat than I do Between you and me I think shes trying to give away the house with her large portions, but I figure we balance each other out doing it this way.
Tim drove home wondering what to do He certainly didnt want to create problems between Bill and Bonnie, but he knew that without consistency, the restaurant would not be successful.
