Below is Domini's process for a pizza with "Toppings" of choice: Take Order (1 min per order) Knead Dough (3 min, dough for max 3 pizzas) Shape & Add Toppings (4 min per pizza) Bake (12 min per pizza, loading & Cool (1 min per pizza) Pack (2 min per pizza) unloading time is negligible) Receive Payment (3 min per order) 1) First an operator has to take the order by phone (1 min per order), no matter how many pizzas are ordered. (Note: all orders will be for the same type of mixer.) 2) Then the operator kneads the dough for 3 minutes. For orders of 2 pizzas or 3 pizzas, the kneading can be done for enough dough for 3 pizzas at once, but is only done for the current order. There is no pre-processing for future orders, as this would impact the quality of the pizza. 3) Then the operator shapes the pizza and adds the toppings (4 min per pizza). 4) Then the oven will bake the pizzas individually (12 min per pizza), as it is small and can only do one pizza at a time. (Note: the time to put the pizza in the oven and to take it out can be ignored.) 5) The pizza needs to cool for 1 minute on a wire rack. 6) Then the operator has to pack the pizza individually in a box (2 min per pizza). 7) Then the operator has to receive the payment for the order (3 min per order). The total flow time for an empty process for an order of 1 pizza is: 1+2+4+ 12 + 1 + 2 + 3 = 26 min Below is Domini's process for a pizza with "Toppings" of choice: Take Order (1 min per order) Knead Dough (3 min, dough for max 3 pizzas) Shape & Add Toppings (4 min per pizza) Bake (12 min per pizza, loading & Cool (1 min per pizza) Pack (2 min per pizza) unloading time is negligible) Receive Payment (3 min per order) 1) First an operator has to take the order by phone (1 min per order), no matter how many pizzas are ordered.
