Most large pieces of equipment such as dishmachines or combi ovens must be planned for 5 to 10 years in advance of purchase, as part of the capital budgeting process. Small equipment can be purchased more easily from the operating budget. Has anyone ever been involved in purchasing equipment? What did you learn from the process? Equipment Specifications As a manager you will need, at some point, to write a specification for a piece of major piece of equipment. It is rare to write specs from scratch. Instead you will likely adapt the specs from existing templates, from a supplier or from your own records to meet your operations needs.
