I have some questions about multiple regression.

I have the data- 2 dependent variables ( not numerical) and a few independent variables ( not numerical), so I recoded them into dummy variables.

So my question is how I can run regression if I have data with dependent variables which are not numerical and independent variables with dummy?

Data: one of the dependent variables:

I strongly consider information from Social Media Ad platforms in my purchase decisions of supplements ( neutral, strongly disagree, somewhat agree, somewhat disagree, strongly agree)

Independent variables: age ( 18-30, 30-50, 50-70+) Need to use dummy too?

gender ( male, female)

education; ( accociate, bachelors, master, doctorate)

income ( 10-40K$, 40-80K$, 80K$ up)

So how I can convert data from dependent variables into numerical ones? And for regression, I need to use Anova or others tools?
