add back , special charges from expenses (this is more art than science, but charges that will not occure every year. * one time non-recuring expense need add back example as litigation expenses, leasehold improvemnts, start up of a new compus, or other special expenses that would not occur in the future.
1. occupancy , other restaurant operating cost,general and administration,pre-openning expenses, impairement costs... listed in expenses... need to clearly which are one special charges or non-recuring expense .. (here should be careful)
then ,add depreciation and amortization..
