One of my favorite restaurants is Sweet Green, and with this restaurant being classified as a fast-casual restaurant, I think they would benefit best from an assembly line structure in their kitchen. In this configuration, kitchen equipment is organized in a line, with the food preparation area at one end and the service area at the other. This allows the cooks to quickly assemble the meals and send them down the line. This would be the most efficient way to assess the kitchen, considering customers go down the line of how they would like their meals prepared. We see this similar to Chipotle's implementation of the assembly line model, which allows for the perfect flow of high-volume, take-out heavy orders, as many of them can be completed very accurately in a short amount of time
