This week marks the last week in the term for the tourism course. The only assignment that is due this week is the final project covering the questions for the book Appetite for America. Please note that cursory answers to any of the questions will result in very few points so be sure to be mindful of the grading expectations that have been used to grade the discussion and drop box assignments. Besides, the book is an excellent account of the way the west was opened to tourism thanks to the railroad companies and the Fred Harvey chain working together so well worth reading for personal knowledge of American history and the essence of this course.

Stephen Frieds book on the growth of the Fred Harvey Chain is an excellent read on the true pioneer of the American hospitality industry and it central relationship to the tourism industry. The author went to great lengths to catalogue the growth of the Fred Harvey business empire and along with it the way in which hospitality and tourism grew westward from Chicago. This book is highly acclaimed and was awarded one of the best books reviewed by the Wall Street Journal in which is impressive since there is a book review in each issue. For those who may become fascinated with the story of Fred Harvey and want to learn more, you can still ride the Southwest Chief line on Amtrak out of Chicago and take it all the way to the California coast and relive the history you are about to read for this class project.
