What Pro Forma sales and COGS am I supposed to start with?

Would I just estimate all the numbers like Total sales, Total cost of sales, stocks, expenses, wages, recruitment tools, etc?

I've researched similar companies but they are all well established and profitable. My understanding is I'm not supposed to be profitable this first year.
