You have worked for Bakers Caf for the past two years. You were engaged by Mr Baker to supervise the operations of the store. You enjoy working at the Caf but believe there are some risks that need to be addressed. You are looking forward to speaking with the new manager (student) so that you can discuss the following risks and formulate a plan to treat them.
Within the role play, you must discuss the following risks that you have identified: There has been very limited information shared with Bakers Caf employees regarding the sale of Bakers Caf to Espresso Caf. Therefore, they are unsure how this sale is going to impact their job at Espresso Caf. Some staff are concerned that they will not be treated fairly by a large company like Espresso Caf and will have less pay each week. As a result, a number of the staff have advised you that they are considering leaving Bakers caf and finding alternative employment. It will be very difficult to find and train new staff in such a short period of time and the impact to daily operations will be significant. There are some chairs in the cafe that are unstable and broken. In addition, some parts of the worn carpet have been lifting and tearing creating a tripping hazard. These issues pose a serious workplace health and safety issue as customers and staff could be injured resulting in fines and litigation. As a control, you decided to simply tape the parts of the carpet that are worn and lifting back down with tape. The control has worked for now, but it is not a long-term fix. The computer that contains all the Caf employee details and financial records is not password protected meaning anyone could access the information. In addition, the data on the computer has not been backed up. If there is a fire, flood or robbery all of the data could be lost. You believe that Bakers Caf wastes a considerable amount of water as it currently uses 41,500 litres a week. Your major concerns include: o Dishwasher is often run when only half full. o Dishwasher is always set to the full wash setting and has a Water Efficiency Labelling and Standards Scheme (WELS) rating of 3. o Fruit and vegetables are washed under a fast-running tap. o Toilets all use the single flush system. o Mr Baker instructs the staff to keep the non-native flowering plants in the courtyard fully watered. You have previously implemented a water meter in the caf so that staff can see how much water is being used each month. You believe that this would make staff realise how much water is wasted and therefore reduce the water consumption. So far it has not been effective as the water consumption has not reduced.
There is a bank two shops away, but the Bakers family bank is a couple of blocks away. The longer distance is quite dangerous as the person taking the money to the bank could be robbed on the way. The caf does not have any written policies and procedures. Therefore, all staff have different opinions regarding correct food handling and storage. All staff complete tasks differently based on their personal preference rather than organisational and legislative requirements. This has resulted in a number of food poisoning and service complaints from customers. The exit at the back of the caf which also acts as an emergency exit for staff in the kitchen and back office is blocked by boxes of stock (cups, containers etc) and a broken fridge that needs to be disposed of. If there was an emergency incident such as a fire the staff members in the kitchen or back office would be trapped. You agree with Raymond Langfords point regarding potential break in at the caf. To add to his point, you want to advise that the banking is not done every day and often upwards of $4,000 is kept on the premises overnight in the cash register as there is no safe. As a control measure, you previously implemented a banking policy and procedure that required staff to conduct the banking daily to reduce the amount of cash kept on the premises. A recent review of this showed that the banking was not completed each day. Therefore, the control was not effective.
Task 2 - Raymond Langford Character Brief
You are the landlord of Bakers Caf, soon to be Espresso Caf Pty Ltd. You are also a local councillor in Toowoomba. You have offered to meet with the new Caf Manager (Student) to provide some information about potential risks that they need to consider. You believe that it is important that the new Caf manager know that the federal government has introduced legislation that backs up the local by-law concerning efficient water usage, particularly by industries. According to the local by-law, cafes can only use a maximum of 30,000 litres per week. The current by-law has fines of up to $50,000 for excessive water breaches. The council is allowing up to two months to make good under certain circumstances on a case-by-case basis. You know that Bakers Caf have some issues regarding the high level of water usage. You recommend that Espresso Caf install a water tank in the courtyard for the caf to use. You know a contractor who can install it within the next month. Unfortunately, there have also been a number of robberies of small businesses in the area that Bakers Caf is located. Thieves are breaking into small businesses during the night and stealing cash left on the premises.
