The Switch is a full-service comfort food restaurant on the main floor of a new construction apartment building. The restaurant was owned and operated by GreenSlate Development. Sustainability was a main feature of the restaurant. To show their commitment to sustainability, GreenSlate decided to follow a pathway that would set them up for a Green Restaurant Association (GRA) Certification. Since 1990, GRA remains the first and clear leader in setting and tracking sustainability standards for the restaurant industry. Working with architects at Alley Private and guidance from GRA, The Switch went with eco-features like 100% LED lamps, drywall with 95% pre-consumer waste, and solar heat blocking window film. The restaurant also uses Ecolab hand soap, a pre-rinse sprayer that uses less than 45 gallons per wash, an Energy Star low temp dishwasher and emphasizes vegetarian dishes. But after the first assessment, GRA only issued The Switch 188 GreenPoints™, resulting in only 2-stars. At that point, The Switch General Manager decided to work with GRA's Restaurant Sustainability Consultant to review the disposable and solid waste practices. This review led to The Switch's points increasing to 233.08 and earning its current 3-star status, making eco-history. Sample Question for the case: Argue if The Switch is a weak or strong sustainable restaurant. Make sure to explain three reasons why it a weak sustainability or strong sustainability operation. Question for the case: Discuss three reasons why the GRA certification that The Switch restaurant chose to pursue was a better option than an eco-label.
