You are expected to visit your selected companys store, observe the operations, and collect some data for operations performance analysis as outlined below (but not limited to):
1. What are the peak period and non-peak period?
2. In peak period,
1) How many customers arrived per hour? Breakdown by channels if applicable, for instance,
walk-in, electronic orders, take-out etc.
2) How many customers serviced per hour? How long does it take to serve customers?
Please define the service time in terms of average, maximum and minimum time. What
makes service times so different from one another?
3) What is staff level ? What are their utilizations? Is there any bottleneck in the process?
4) What is queue size and customer waiting time? If a customer just walks in, is it possible
to estimate how long he or she needs to get an order?
5) Based on your observations, what are major challenges to the store management in peak
period?
3. The same questions for non-peak period.
4. How do peak-period and non-peak period occur throughout a selected day (or days)? How to deal with such demand fluctuation efficiently and effectively?
5. On performance measurement (or KPIs), what do you like to propose to monitor and improve
the operations performance?
6. Do you think if the store operations performance is in line with the corporates performance
priority as discussed in the first assignment? Do you have any recommendation for the
performanceimprovement?
