Classic Restaurant Concepts is a private company based out of Framingham, Massachusetts, which formed in 1997 by a group of investors who wanted to open up independent Irish pubs throughout the Massachusetts area. The group was headed by Skip Sack, a restaurateur, most notably known for his ownership of the Red Coach Grill and expansion of the Applebee’s Neighborhood Grill and Bar franchise. The idea for Classic Restaurant Concepts came when Skip Sack heard about the Irish Pub Company, a restaurant design company in Dublin, Ireland, which develops concepts for Irish pubs from the ground up. Sack believed that there was an opportunity to open up an Irish pub around the Boston area and partnering with Irish Pub Company would ensure the development of a successful concept.
