You will undertake a study of the Subway restaurant convenient to you. This will require observation, interviewing the manager and employees who work in the shop and your analysis of the data gathered.

Deliverables:

1-A list of tasks involved in the sandwich making process along with a good estimate of time required for each task. To get a good estimate you may need to take some timing of several sandwiches and calculate the average time. Be sure to include the paying as a task.

2-A precedence diagram. Assume all customer want their sandwich toasted.

3-The calculated cycle time (CT) required to support the lunch hour traffic. This should be a calculated value.

4-The minimum number of work stations. This should be a calculated value.

5-The assignment of tasks to work stations. Assign the tasks AS IF THE RESTAURANT WERE JUST OPENING. DO NOT USE THE ASSIGNMENTS THAT THE MANAGER MAY GIVE YOU. DO IT FROM SCRATCH.

6-A short descriptive analysis (1/2 to 1 page) of the process including any bottlenecks and opportunities for improvement.
