Assessment 3 PART A 1) You are required to develop a roster for the kitchen of Queensland Restaurant for the week starting the week you start this project as outlined below. The restaurant operates 7 days a week, lunch and dinner. . . The kitchen has 3 sections: Cold larder - Hot Section -Pastry The staffing requirements are as follows; Cold Larder is run with 1 Demi-Chef or 1 Chef de Partie at all times Hot section requires one senior staff (Chef de partie or Sous-Chef) and one junior chef (Commis or Demi Chef) at all times. Pastry section requires one Senior chef each shift of the week and a Junior chef during busy times (Friday and Saturday nights only) The Head-chef runs the pass and oversees the kitchen operation from Tuesday till Saturday. The Sous-chef runs the pass and help on the hot section during the Head-Chef days off which are usually Sunday and Monday Each staff members work is to work the following (with the exception of the apprentice chef as she can only work 2 and a 1/2 days only: 4 x 8 hours split shift with 2 x 30mins (lunch and dinner) unpaid meal break 1 x Straight shift of 6 hours with 1 x 30mins unpaid meal break Each staff members have 2 days off in a row. The roster has to cover all areas as stated and no overtime and allowed.
