Businesses strive to understand customers'/prospective customers' wants and needs, regarding their product and service offerings. The Quality Function Deployment matrix is but one way to capture/prioritize and contrast the customers' needs with the businesses' capabilities/technical offerings. These types of documents should be kept evergreen and it's a great way to have a 'consistent' understanding of the customers needs/wants - so that marketing isn't thinking one way, engineering/R&D another, and operations, yet another. Moreover, these documents are a great way to educate new employees regarding products/services, and customer priorities, and what the business opts to accommodate. Some QFDs also have information on how well different competitors accommodate the customer needs, which can spark actions to improve product/service features - to meet or beat their competitors.
The matrix also enables one to indicate the relationship between customer priorities and the firm's capabilities/features. If healthy food choice is a customer priority, then there is a strong relationship to the firm's food offerings (QFD for a restaurant chain)- it is up to the business to purposefully meet that priority, or opt to ignore it, or counter it with other features, such as low price.
