PROJECT 3 - Food & Beverage Operations - Building a Purchasing and Inventory Control System

Worth: 50 points

Due Date: 05/10/2023

1. Project 3 - The student will create an inventory sheet (Excel template) for purchasing and inventory control (provided example) to calculate inventory cost. Additionally, they will create or bring copies of the corresponding invoices (provided example) for the products used in the inventory.

2. Create an inventory sheet that includes refrigerated, dry, and beverage products, breaking down packaging, quantity, and price of each product in inventory used in the preparation, plating, service, and delivery of food operations.

3. Create the necessary purchase sheets for each supplier for the products in your inventory. This should include supplier contact information, order and product delivery days, product descriptions, packaging, and prices. Include columns for physical inventory count, product ordering and usage, and establish the ideal par level for each product.

4. Each inventory template must have the name of the warehouse to be counted, the products associated with that warehouse, how to count them (pounds, each item, ounces, etc.). It should include the cost of the inventory unit, initial count, final count, usage, purchases, total inventory, and food cost percentage.

5. The work will be presented in a written report to be submitted to the professor following UAGM's rules and guidelines for written assignments.
