If Bar Rescue teaches us nothing else, it is that John Taffer doesn't embrace excuses, he embraces solutions. What the show spends shocklingly little time on is the fact that John has a deep understanding of both bar science and Little's Law in all its seductive forms.

This week's episode brings you to Oklahoma City and the bar known as Sherlock's located near I$-40$ & Meridian. After a day of rigorous training with his ace mixologist, it is time for their stress test. John has summoned $115$ thirsty customers for Sherlock's soft opening at $7$ pm and they are lined up outside eager to witness this magical transformation. Serving mixed drinks is a three$-$step process conducted by the skilled staff at Sherlock's. First, Patti takes the order and enters it in the computer, which takes $20$ seconds per customer. Then Kevin prepares the drink, using an appropriate level of bar flair. More flair takes a little more time, averaging about $85$ seconds per drink, but this allows Sherlock's to charge a bit more for their drinks. Finally Adrienne delivers the drink to the customer with a winsome smile and collects the payment. It's a large bar, but she walks very fast, and is able to deliver drinks in $30$ seconds on average.
