The title of the person I spoke with is the owner Mr.Rivera.
How do you consider whether to make or buy a menu item such as a salad dressing or fresh-baked dessert?
Mr.Rivera states that it all depends upon the season and sale of some foods. He proceeded to include an example such as the fruit or strawberry frappes (smoothies) because theyre in season they tend to be cheaper which means that he would take the responsibility of purchasing the strawberries himself instead of a vendor in order to save money. Its also great for business because he can place the food items at a great price.
Who is involved in make-or-buy decisions?
The person who manages the food production, the owner , and the chef. He states most of the time we will review if its better to purchase with a vendor or themselves, and they all come to a decision.
How, if at all, do you obtain your customers input about a make-or-buy decision?
Mr.Rivera states that he encourages his customers to leave reviews about their food choices and how they enjoyed their food options. He says positive or negative theyre both extremely helpful as if the comments are negative he will find a way to fix that problem so that the customers have a better experience.
How do you determine the quantity needed of your most popular products each week?
Mr.Rivera states that this question also fits in with the previous one as every end of the week they review their most purchased items and its usually the same items every week. Because its a Puerto Rican food truck, people that come look to purchase traditional foods such as alcappuria, mofongo, and pia coladas. Therefore he makes sure to buy a great amount of bananas as its one of their main food items used. The fried foods can also be frozen and then fried fresh which means that they can save more money because they dont worry about spoilage too much. For the Pia Coladas again if pineapples are in season he makes sure to purchase them himself and if not they have a good supplier.
What factors are most important when determining which vendors you send requests for proposals (RFPs)?
The most important factor when determining which vendors we send a request to proposal would be how fresh the ingredients are. Quality is important when serving great food and this all affects the business as well as the customers. Another important factor would be the prices of other Puerto Rican food businesses, if we can find a way to make our pia Coladas $1 less we will make sure to get that done in order to get customers into our business.
What was the most interesting or valuable piece of information you learned from your interview?
The most interesting information I learned from the interview would be checking what the most sold item is at the end of the week. This is a smart technique when running a business as it helps out with the customers enjoyment and helps out the business manage its food cost efficiently. I would love to one day be a business owner and this will be a technique I would suggest to use.
