PROJECT: First, it is assumed that apples contain in average 65% wt. of water, 10% of solids and the remaining are aroma substances and the weight of one apple is about 100 grams. (1) From the filtration process, it is assumed that only 85% of water and 80% of aroma of the apples can be extracted as liquid from apples. The rest is in the solid waste from apples. (2) In the evaporator, the dilute apple juice is now concentrated to contain only 20% water, the remaining being aroma substances. It is also assumed that 7% of the aroma of the feed has been wasted with the water vapor stream leaving the evaporator. (3) The final step is a drying process where the dehydrated apple juice contains only 1% wt. of moisture and the remaining is aroma substances.
