(2) In the evaporator, the dilute apple juice is now concentrated to contain only 20% water, the remaining being aroma substances. It is also assumed that 7% of the aroma of the feed has been wasted with the water vapor stream leaving the evaporator. (3) The final step is a drying process where the dehydrated apple juice contains only 1% wt. of moisture and the remaining is aroma substances.
