Isabella has studied her current restaurant process & created a precedent chart with the order of task completion & time required except for the oven time. (See Case Pt#3 to type in the oven time chosen by your Crossover Point Analysis.)
Isabella knows her current process is inefficient. She tends to staff up to 8 employees per shift. She is not sure of the pizza output per hour & knows it could vary greatly, therefore she would like to base it on the highest sales month projected for 2022. Generally that is October, where the store is open for 12 hours per day & 20 days in October for a total of 240 hours of available work time.
For the analysis complete the following:
-Determine the available work time in minutes for Oct.
-Go to Case Part#1 & determine the number of pizzas that would be sold in October 2022. Enter this number in the chart.
-Go to Case Part#3 to determine the pizza oven baking time & enter this for Task H in the precedent chart.
-Calculate the remaining data for the Production Process Calculations.
-Create the process flow dragging the circles & setting up the arrows as per Precedent Chart.
- Assign the Work Stations by color coding the tasks.
-Fill in the Work Station Chart (You may or may not need all of the rows provided.)
-Determine the Process Work Station Bottleneck Time, Efficiency, & Total Idle Time
