First comes a tiny taste treat called an amuse-bouche, the purpose of which, as its name suggests, is to "tickle the palate." Second might be a light soup to set up you're taste buds for the fish coarse. The fish is often presented in a tasty sauce that compliments the delicate flavour of the seafood. The forth course might be a small serving of poultry or meat such as quail or foie gras; this small dish gives the chef a chance to show off. A salad usually follows the fish, but weather the chef presents a traditional salad or an imaginative creation will depend on what is available in the market that day. At this point in the meal, its usual to have a small sorbet, the affect of this small dish is to clear the palate for the main course. Now the principle dish is presented its designed to appeal to the senses of site and smell as well as taste. Next, its time for desert, although in many top restaurants, a selection of cheeses follows the entree, and desert comes latter. Yes, a formal dinner takes much more time then an outing to a burger joint, and it is alot more expensive, but it is likely to be an experience that lingers long in the memory of It's fortunate participants
