Section C: Performance Activity Objective: To provide you with an opportunity to demonstrate the required performance elements for this unit. This activity will enable you to demonstrate the following performance evidence: make and present each of the following espresso-based coffee beverages on three different occasions within commercial timeframes: o caffe latte o cappuccino o espresso (short black) o flat white o long black o piccolo latte o mocha o ristretto o short and long macchiato Monitor quality indicators for extraction as listed in the knowledge evidence during preparation of the above espresso coffee beverages and make adjustments to restore extraction to required standard Present the above espresso coffee beverages and accompaniments demonstrating consistency and quality Use the correct equipment, ingredients and measures to make the above espresso coffee beverages Answer the activity in as much detail as possible, considering your organisational requirements. 1. As a workplace activity (or simulated workplace activity) perform the following: Choosing the correct service-ware, tools, ingredients and measures, make and present the following beverages for service on three separate occasions, ensuring that commercial timeframes for beverage making are achieved: Caf latte Cappuccino Espresso (short black) Flat white Long black Piccolo latte Mocha Ristretto A short and a long macchiato. You should ensure that beverages are monitored for their quality and consistency, and that all beverage recipes and/or any customer preferences are followed.
